It's been awhile since I've posted a recipe review on here. For those wondering, yes, one year later, we are still cooking and eating Skinnytaste at home. While the exercise, admittedly, slacked off during busy season, and then a few inches managed to creep back on me after back to back to back vacations, I'm happy to report it's still Skinnytaste meals we eat at home, and still healthy, fresh, Skinnytaste meals that I'm always craving.

Using her recipes for a solid year has totally changed our lifestyle including how we meal plan, cook, and eat. When we grocery shop, our list is mainly produce, and I love it.

Yes, we still go out and eat pizza. And have some wine or beer. Or mojitos. And I've been back on the intense workout schedule again (every single day, with some double days) using the new Insanity Max 30 program for the past three weeks (if you're curious).

But when I cook at home, it's still 99.9% Skinnytaste recipes. I bought her cookbook a few months ago and love it exactly as I thought I would. We've tried at least 10-15 out of the book so far (intermixing with what she posts to her site) and I'd make every one of them again and again.

But this one. This one was heaven in my mouth. Complete and utter food porn. Not only is it my most favorite recipe of hers to date because of taste, it just looks pretty, lol. She has many recipes with some of these key ingredients and we've probably tried them all and it's why I now have a crazy obsession with all things avocado and mango.

The only change I had to make was not using papaya because Target didn't have it. Otherwise, I made as is, but in two small batches as it was just myself eating it for lunch. I can literally see myself eating this every day. It was that good.

I've made a version of the southwestern black bean salad in the past, & this similar salad with cucumbers & tomatoes sounds so summery & delicious!

I have way too many favorites from Skinnytaste! Recently we made the Spaghetti Squash Primavera and I've wanted to make it every week!

I really want to try the bakes spaghetti squash and cheese. We have some left from the garden so that might be on the menu this week:0
